“Food & Wine Pairing”
Les 110 de Taillevent Paris is the legendary place for food and wine pairing. An initiatory journey to the heart of oenology, this original idea offers a menu where each dish is associated with 4 wine pairings by the glass, reflections of elegant and bourgeois cuisine.
The innovative idea for this restaurant came from the Gardinier brothers, inspired by their professional experience and their sense of taste.
By frequenting numerous establishments, they notice that most offer a limited selection of wines by the glass, often poorly matched with dishes and at unattractive prices for mid-range offerings. Humbly, they will affirm that they have not invented anything and yet the unique idea manages to fill a void: offering a list of more than 100 quality wines by the glass, from various French and foreign regions, ranging from the most accessible to rarer, all perfectly harmonized with the dishes on the menu.
Their success is largely based on access to the vast cellar of the Le Taillevent parent company. The offer is distinguished by its abundance and generosity, but it is also characterized by absolute rigor in the selection of wines and in the development of food and wine pairings.
The 110 de Taillevent offer the unique chance to immerse yourself among the thousands of references from the prestigious Caves de Taillevent, enhanced by the gastronomic know-how of one of the greatest French restaurants.
For the first time, a restaurant created by an institution of French haute cuisine, offers a menu where each dish is associated with 4 wine pairings by the glass (7 or 14 centiliters), inspired by the season and specially developed to make pairings dishes and wines of unequaled precision.
For each dish, our sommeliers offer a selection of 4 wines, in 4 categories: Revelation, Serenity, Audacity, Fullness.
Each of them expresses the facets of a perfect harmony between the glass and the plate. A real diversity of proposals made possible thanks to an innovative wine conservation system. For the more playful, the “secret” agreement allows for blind discovery in a dark glass.
From the fresh and invigorating touches of citrus in a New Zealand Sauvignon to the depth of the tobacco and cedar notes of a great Bordeaux, through the generous fruit of an Italian Barolo, we can't have enough of 'a life to explore all the flavors of the world's terroirs.
