By joining Les 110 de Taillevent in September 2025 as part of a work-study program for a professional sommelier diploma, Élise Cros aimed to deepen her knowledge of wine and terroirs. While this training allowed her to discover vineyards and enrich her oenological knowledge, she quickly felt the need for more hands-on experience. A few months later, in March 2026, the company offered her a permanent position as a sommelier, an opportunity she readily accepted.
On a daily basis, Élise manages the wine cellar, serves the wines, and assists customers with food and wine pairings. But beyond the technical aspects, it's the human element of the job that truly motivates her. Advising, listening, sharing the story behind a bottle, and creating new tasting experiences are all facets that fuel her passion.
Choosing a career in the restaurant industry was a natural fit. Drawn to a vibrant and fast-paced environment, she appreciates the constant interaction with customers and the diversity of the exchanges. More than just a sales job, sommelier work represents for her a profession of sharing knowledge, where each recommendation is an opportunity to evoke emotion.
